OH- EM- GEE. Eric discovered the most amazing Cobb Salad recipe and I made it for dinner last night. It was DELECTABLE. If you’d prefer a layout of ingredients and written directions, well I’ve got you covered. This recipe serves two but I think its makes enough for 3! It’s the perfect dinner to get your protein & veggies in while enjoying the aroma and taste of bacon & avocado. Yum. No seriously, yum yum YUM.
8 slices of bacon
2 chicken breasts
1 head romaine lettuce
2 hard boiled eggs
2 small tomatoes
1 medium avocado
1 tbsp yellow mustard
1/4 apple cider vinegar
1 shallot clove
1/4 olive oil
1 tsp salt
-Chop bacon into small pieces and cook in a skillet
-Meanwhile, lightly salt & pepper chicken breasts
-When bacon is finished, drain excess fat and add chicken to pan
-sautée until cooked through the middle
-Chop romaine lettuce and put in two large bowls
-Dice hard boiled eggs and add to lettuce
-Dice avocado and tomatoes and add to each bowl
-Add bacon bits & cooked chicken
In a small bowl, mix mustard, apple cider vinegar, and diced shallot
Add salt, pepper, and olive oil. Mix again.
Drizzle dressing over each salad.
