It may only be August, but we’ve been enjoying pumpkin snacks all summer long. A healthy snack that my kids love? I’ll do anything to create them at home.
I found this simple recipe on Pinterest and it makes about 10-12 balls!
Ingredients:
1 1/2 cup old fashioned oats
1 1/2 tsp pumpkin pie spice
1/3 cup pumpkin pureƩ
1/3 cup nut butter
1/3 cup honey
1.5 scoops vanilla protein powder (I use Juice plus!)
chocolate chips (if you want to make them more of a treat!)
Add chia seeds or flax for extra fiber!
Mix all these items in a large bowl and roll into golf ball sized balls. Your hands will get super sticky! Refrigerate immediately so the balls hold together and serve after 15-30 minutes. Enjoy! My kids will eat about 2 at a time.
