Pumpkin Protein Balls

It may only be August, but we’ve been enjoying pumpkin snacks all summer long. A healthy snack that my kids love? I’ll do anything to create them at home.

I found this simple recipe on Pinterest and it makes about 10-12 balls!

Ingredients:

2 cups old fashioned oats

1 1/2 tsp pumpkin pie spice

1/3 cup pumpkin pureé

1/3 cup nut butter

1/3 cup honey

1.5 scoops vanilla protein powder (I use Juice plus!)

chocolate chips (if you want to make them more of a treat!)

Add chia seeds or flax for extra fiber!

 

Mix all these items in a large bowl and roll into golf ball sized balls. Refrigerate immediately so the balls hold together and serve after 15-30 minutes. I edited this recipe so it’s 2 cups of oats instead of 1.5 and if you do that, yours will actually hold better and look like balls instead of the sticky spoonfuls pictured above!

Enjoy! My kids will eat about 2 at a time.
