Do any of you love chocolate peppermint as much as I do? I thought I’d add this festive cookie from Minimalist Baker to your rotation this year as it has been a hit with our family.
This is actually a very simple recipe and it doesn’t take too long to make! Eric said it’s one of the best cookies I have ever made! I hope you enjoy these as much as we do :)
Ingredients:
1 stick unsalted butter
3/4 cup sugar
1 egg
1/4 tsp peppermint extract
1 1/4 cups unbleached flour
1/3 cup cocoa
1/2 tsp baking soda
1/4 tsp baking powder
1/4 tsp salt
1 candy cane or 5 peppermints crushed (I literally used a hammer!)
1/3 cup semisweet chocolate chips
Directions:
Preheat oven to 350 degrees
In a mixing bowl, beat butter and sugar until well mixed and add egg and peppermint extract
Once light and fluffy, add dry ingredients until all mixed thoroughly
Add chocolate chips and stir in with a spoon.
Chill dough in freezer for 10 minutes.
Roll dough into small 1-2 inch balls or until you form at least twelve cookies. Place dough on an ungreased baking sheet.
Press fingers to flatten dough into thick little pancakes and bake for 10-12 minutes.
Sprinkle each cookie with crushed peppermint.
I prefer to eat these after they’ve cooled since they are minty! I will also note that this is the best cookie dough I’ve ever tasted ;)
