Shrimp Ceviche

Is there a recipe you’ve recently learned that you can’t stop making? For me, it’s this ceviche. I thought I’d need a side to serve it with (for most people, that’s chips), but I’ve found this recipe to be enough by itself! It’s packed with protein and vitamins and Whole 30/Paleo approved!

I found this recipe a while ago while browsing recipes on Pinterest. What I love about it (besides its delicious taste!) is how simple it is to make. I’m all about a recipe with minimal steps!

Ingredients:

1 lb shrimp
2 cup roma tomatoes
2 avocados diced
1/4 cup fresh cilantro
1/2 red onion
2 limes juiced
juice of one orange
salt!

Directions:

Bring a pot of water to a boil and heat thawed shrimp for 2-3 minutes to bring out flavor
Cool shrimp in a strainer with cold water and chop into cubes

Dice roma tomatoes and throw in a bowl with avocado, cilantro, onion, and shrimp
Squeeze orange and lime juice over bowl
Sprinkle a dash of salt over ingredients and mix!
Refrigerate for one hour to get the most of the citrus taste!

I totally forgot the cilantro for this particular batch and you really do need it! It makes all the difference!
