Paleo Chicken Salad

I have been on a chicken salad kick these past two weeks and I’m loving every bit(e) of it… Now that I’m back at school and packing lunches every day, I’m trying to mix it up and get a little variety in my meals. I find that when I’m avoiding dairy and gluten, I feel my best, so I always research paleo recipes. I found this delicious Chicken Salad recipe on Paleo Leap and I love how much flavor it has without the usual creamy ingredients!  You know me, I love super simple and healthy recipes. If E loves it as much as I do, I’ve know I’ve done well :)

I changed up only a few things from the original recipe… I’m not a celery fan so I’ve taken that out and I used lemon juice instead of lime because its what I had… And it tastes great! So without further adieu… here it goes!

Ingredients:

1 rotisserie chicken or 2.5 chicken breasts- shredded
1 large apple (I love honey crisp), chopped
1 large avocado
1/2 cup red onion, diced
1/4 cup fresh parsley, chopped
1 tbs garlic powder
3 tbs lemon juice
2 tbs extra virgin olive oil

salt & pepper to taste

Directions:

Make sure to shred the chicken bits into small pieces and add all ingredients to one big bowl. Mix it up with a fork. It creates about 4 servings…  
Cover & refrigerate until ready to eat :)
