It’s Friday morning. My Mom & Aunt Peggy are in town. And my cousin Kristin is leaving her kids with her husband and flying down here from Boston this afternoon. Eric and I are totally flattered that everyone is making the effort to come down here. We know it’s totally JUST to see us and not explore Austin. Austin isn’t alluring, like at all ;)
Last night we caught up on life, drank wine, and cooked butternut squash soup together. I had this recipe in mind but as soon as they saw how I planned to cook the butternut squash (peel, chop in pieces, & roast- super time consuming), they jumped in. And it was amazing! We cut the squash in half and lay them in an inch of water on a pan and let them steam. Peggy is a wonderful cook and watching her put this soup together without really too much thought was kind of spectacular. I’ll share the recipe next week because it was outstanding. Today we’re going to explore some antique shops and eat at Hopdoddy, the best burger place ever. We’ll relax this afternoon and grab Kristin from the airport and eat dinner at Fonda San Miguel. I can’t wait to show them Congress Avenue, Allen’s Boots, the Capitol, and take them out to the wineries in Driftwood. We’re going to have Salt Lick barbecue tomorrow :)
My cousin Kristin is the oldest of our cousin’s on my mom’s side and there are a grand total of 27 of us. Yup. Life’s a party in the Solberg family. Now that many of us are ‘grown ups’ and live in different cities, it’s a lot harder to see everyone. So this little weekend getaway for everyone is extra special :)
Anticipating visitors this was the catalyst for us getting our place set up ASAP. We wanted it to be put together and look good for them. Here is a sneak preview of our new home! I am obsessed with this little bookshelf :)
