

Let me introduce you to the easiest salad recipe that you’ll make on repeat this summer. All you need is lemon juice, olive oil, and a little salt for the dressing! This is the best side salad but I often throw in grilled chicken to make it a meal.
All you need is some arugula, parmesan, avocado and some pine nuts. I add in a little sliced cherry tomato.
For a single serving:
1 handful arugula
1/4 cup shredded parmesan
1/2 sliced avocado
1 tbs pine nuts
Honestly, I think this recipe is better off eyeballed in terms of how much of each ingredient you use.
Dressing: (single serving)
2 tbs olive oil
1/2 tbs lemon juice
Dash of Salt
Mix your ingredients and you have yourself a zesty flavorful salad. It’s so refreshing! Often people will roast their pine nuts for this salad but I find its equally as tasty without the extra work. Also, it’s ideal to have your arugula at room temperature for maximum flavor!
