Now that school is back in session and my kiddos are all back into routine, I’ve found myself itching to branch out with our food prep! I have a few very selective eaters and finding foods that everyone likes can be hard to come by. We routinely make banana pancakes that my kids LOVE so I was determined to find a similar recipe with sweet potatoes! I found this recipe from Happy Healthy Mama and tweeked it just slightly to create the perfect sweet and nutrient packed pancake.
My picky six year old said, “Mom, I can’t believe I’m saying this- but can I have some more?”
Now that’s a win for us.
This recipe is easy but requires a little time because you’ll need some roasted sweet potatos! I made sure to photograph the sweet potato process because cooking the perfect soft potatoes makes a difference!
All you have to do is cut your potatoes lengthwise and face them down on a baking pan, and rub them each with a little bit of olive oil. I bake them for 30 minutes at 425 degrees! A fork should sink right through it.
Here are the ingredients for the pancakes:
1/2 cup cooked sweet potato
2 eggs
1 teaspoon cinnamon
1 teaspoon coconut sugar (or whatever sugar you prefer for extra sweetness)
It’s important to keep these ratios! But make as much as you like. This batch will serve you 8 mini pancakes.
I mix the items in blender and cook on low(ish) heat on my cast iron! It’s about 2-3 minutes for the first side and about 30 seconds to a minute on the other!
This greats the perfect pancake! We have eaten multiple batches at one sitting so I haven’t had the experience of refrigerating them but I’m sure these would last a few days.
