I asked my kids what their favorite foods were and I got a variety of answers from fruit snacks to ice cream. And they looked at me and exclaimed, “We know you’re favorite food! It’s salad!”
I do like my salads. They may not be in the same league as a great bowl of ice cream but I eat some variety of a salad every single day. It’s my lunch order and I love it.
Greek salads have been heavy in my rotation lately and I thought I’d share a really yummy salad with tuna that I’ve been loving!
Ingredients:
1 cup of spinach
1 packet of tuna
4-5 cherry tomatoes, halved
1/4 cup chickpeas (I roast mine with paprika!)
diced cucumber
a handful of kalamata olives & banana peppers
1/2 small avocado
feta
To really pull the flavors together, I drizzle olive oil on top and then splash it with white balsamic vinegar. Lightly salt the salad and mix! There’s something insanely delicious that happens when you get a spoonful of tuna, feta, and chickpeas. Too good.
I often alternate this salad with chicken. Most days I don’t have the chickpeas but every other ingredient is something I always have on hand!
