Here is a very simple dynamite recipe for you to make as your next appetizer. Shrimp ceviche! I browsed quite a few recipes on the internet and I think I followed this one mostly. There are always other ingredients you can add in like cucumber, jalapeño, jicama, apple, grapefruit, etc, but I kept it a little more simple!)
Ingredients:
1 lb cooked jumbo shrimp
1 medium avocado sliced
1/4 cup fresh lime juice
1/4 cup fresh lemon juice
1/4 cup orange juice (or the juice of one orange)
1/2 cup chopped cilantro
1/4 cup diced red onion
2 roma tomatoes sliced
salt and pepper to taste
(1 jalapeño seeded and diced if you like a little zip!)
There are a variety of ways to make ceviche, but the key is the lime juice (in my opinion). You also need salt to pull those flavors even more. I always sauté my shrimp with a tiny bit of cajun or seafood seasoning and a light sprinkling of salt. Once you cook them, dice them into bite size and throw into a bowl. Mix together citrus juices and pour over shrimp. Top with the remaining ingredients (except the avocado) and let it all marinate. Add in sliced avocado before serving. Enjoy same day!
