Stuffed peppers is one of our favorite cozy dinner night recipes over here and they are pretty easy to make. The total prep time is about 40 minutes and I’ll often cook the meat ahead of time to make the process go quicker when I’m ready to serve dinner. This particular recipe serves 3 adults so I’d add another bell pepper if you’re eager to serve another or double the recipe for a bigger family.
Ingredients:
4 Colored Bell Peppers
1 lb ground turkey
1-2 tbs olive oil
1/2 yellow or white onion, diced
1 tsp garlic
1 tsp cumin
1 tsp garlic powder
1 tsp Italian Seasoning
1 8oz can tomato sauce
8 oz cooked rice (I prefer the pre-cooked packets!)
1/2 cup shredded cheddar cheese, broken into two parts
Directions:
Preheat oven to 400 degrees
Take 4 bell peppers and slice them in half and cut the tops off.
Spray a baking pan with canola oil and place peppers facing up like cups. Drizzle with olive oil and sprinkle with a dash of salt.
Bake for 15 minutes and set aside.
While peppers are baking, heat a medium skillet with a tablespoon of olive olive oil and sauté yellow onion and garlic
Add in ground turkey and using a spatula, break it up into small chunks
One the meat is more cooked and a little browned, season with your cumin, garlic powder, and Italian Seasoning
Pour in 8oz can of tomato sauce and let it bubble. Bring your heat to a simmer and add in 1/4 cup of cheese and the rice, stirring well.
Scoop meat sauce into each bell pepper. I use a spoon to pat it down and really wedge it all in there. There will be some excess and I serve that on the side!
Using the remaining 1/4 cup cheese (and then some) to sprinkle over each bell pepper.
Put the peppers back into the oven for 15 or so minutes, or until cheese is melted and bubbling! Make sure to not burn the peppers :)
Set aside to cool for a couple of minutes and serve immediately!
I love serving this with Trader Joe’s sweet Potato Gnocci. Such a yummy, feel-good meal. Enjoy!
