I think if there’s one thing I’ve learned to craft over the years, it’s a really good salad. I’m a salad lover and always looking for ways to fuel my body that taste good too. This sweet potato apple Fall salad is nutrient packed and will keep you full for hours. You can sub out different items like the avocado or the cheese or seeds or add things in like bacon or berries, and it will all taste phenomenal. I think the crucial ingredients to this salad are the sweet potato, apple, and of course, honey mustard vinaigrette.
The dressing is via The Defined Dish:
1/4 cup olive oil
2 tbs lemon juice
2 tbs apple cider vinegar
2 tbs dijon mustard
2 tbs honey
salt and pepper to taste
I always cook my sweet potatoes for about 30 minutes at 400. The salad is even better if the sweet potatoes are warm.

rotisserie or grilled chicken
goat cheese
pumpkin seeds
dried cranberries
