I thought I had shared this a few weeks ago and apparently I didn’t, but this salad is so good, it needs a permanent place on my blog. I’ve been trying to eat less meat and increase the healthy fats and vegetables in my diet so I created this power packed salad that is both filling and refreshing. The best part about it is you can add just about any vegetable you have in your refrigerator and the dressing will blend it so well and give it great flavor.
The crucial ingredients are quinoa, and either avocado or goat cheese. I personally love having it ALL. The rest can be any kind of veggie you like! I throw raw cauliflower and broccoli in it and will either fill the rest with vegetables or a fruit variation.
Any kind of lettuce will do too! The key is the dressing. After I’ve diced all my ingredients, I drizzle olive oil over my salad, then pour a little lemon juice over it, and salt (which pulls all the flavors!). The lemon gives it the refreshing aftertaste!
Ingredients:
Spinach, arugula, or any spring mix
Diced veggies (I love bell peppers, red onion, cucumber, cherry tomatoes, cauliflower and broccoli)
1/2 avocado
1/2 cup cooked quinoa
goat cheese
1 lemon squeezed
olive oil (I probably drizzle half a tbs)
salt for taste
