Defined Dish strikes again with the yummiest colorful Greek salad bowl. With only a few ingredients and all paleo friendly, this recipe is both flavorful and healthy.
I know that the majority of the recipes on this blog are not mine. Probably 95% come from elsewhere but I like having a place to store all these inspiring meals so my blog is a great resource for all different things. I always always site the recipe origins!
Anyway, let’s get to this delicious and easy salad. I feel like this will probably a lazier recipe post because I truly followed this recipe to a T, so there’s no need to add in my two cents really. You could easily used plain rotisserie chicken but the spices are what make it feel Greek. The salad components are romaine lettuce, feta cheese, sliced cherry tomatoes and red onion, kalamata olives, and cooked quinoa or brown rice. The dressing is Tzatziki made with greek yogurt and a few other spices.
Here is what you need for the chicken:
4 cups/1 whole rotisserie chicken
1 tsp cumin
1 tsp paprika
1 tsp garlic powder
2 tbs olive oil
a dash of salt to taste
Heat a skillet with olive oil and throw the rotisserie chicken on. Sprinkle spices over the chicken so it covers all sides and cook for just a few minutes until the chicken is warm. There will be plenty of chicken left over for your next bowl.
For the dressing:
7 oz cup plain greek yogurt
1 Persian cucumber diced
2 tbs olive oil
1 tbs minced garlic
1/2 tsp white pepper
1/4 tsp kosher salt
2 tbs lemon juice
1/2 tsp distilled white vinegar
1 tbs freshly chopped dill
Mix all ingredients for a flavorful dressing. The dressing could probably cover 4 salads.
Add a little bit to your colorful bowl of goodies & enjoy!
