I’ve been on a mission to find more healthy recipes for my kids in the new year. I have a list of recipes I’m working through and the first was something with shredded coconut. I found this no bake energy ball recipe yesterday and simply switched one ingredient to make them the most delicious little ball of nutrients, ever. Even my husband said, “Meg, these are incredible”.
They are great for kids, but they are also an amazing post work-out or breastfeeding snack! Heck, they’re a good anything snack. I highly recommend trying these and substituting vanilla extract for peppermint. Just something about the salty peanut butter, shredded coconut, and mint is insanely tasty.
Ingredients:
1 cup rolled oats
1/2 cup shredded coconut
1/2 cup peanut butter (or any nut butter)
1/3 cup maple syrup (or honey)
1 tbs chia seeds (or flax seeds)
1/2 cup optional chocolate chips
1 tsp peppermint extract (or vanilla, if that’s what you have at home!)
Directions:
Mix all the ingredients in a bowl and refrigerate until firm to roll into balls.
Roll into 14 balls! They will be a tad sticky. That’s okay! Enjoy :)

120 calories. 10 net carbs. 3g protein. 7g fat
