I’m so accustomed to sweet pumpkin recipes that a savory one came as a delicious surprise. This cozy soup was the perfect thing to make last week when our first real cold front arrived. Cozy mornings in the 40s and beautiful afternoons in the 60s. Does it get more beautiful than that?
Recipe via Big Oven
INGREDIENTS:
2 tsp unsalted butter
2 yellow onions diced
2 tsp flour
4 cups chicken broth
3 cups pumpkin puree
1/2 tsp minced garlic
1/2 tsp ground cumin
1/4 tsp salt
1/4 tsp white pepper
Plain yogurt for additional taste (topper)
a sprinkle of nutmeg
DIRECTIONS:
In a 4-5 quart non-stick saucepan, spray lightly with cooking spray. Over medium heat, add butter and let melt. Add and sauté onions until lightly brown (about 5 minutes). Add flour to thicken.
Add chicken broth, pumpkin puree, and spices and whisk together. Bring soup to a simmer and cook for 15 minutes with the occasional stir.
Pour into a bowl and top with a little yogurt and a sprinkle of nutmeg or pumpkin pie spice!
