We are suckers for little muffins around here. Whether they’re banana, spinach, or pumpkin- they’re always a hit with the kids and a great way to get some nutrients in them. This pumpkin muffin recipe is via Erin Lives Whole and the added chocolate chips made them feel like a special treat for the kids. This recipe is simple and straightforward and doesn’t take very long to make :)
Ingredients:
1 cup pumpkin puree
2 eggs
1/2 cup almond butter (or peanut butter for added flavor!)
1/4 cup maple syrup
1/2 tsp vanilla
1 3/4 cup almond flour
2 tsp pumpkin pie spice
1 tsp baking soda
1/4 tsp salt
1/2 cup chocolate chips!
Directions:
Preheat oven to 350 degrees and grease muffin tin or fill with cupcake liners
In a mixing bowl, whisk together wet ingredients.
In a separate bowl, mix together dry ingredients.
Add wet to dry and mix evenly. Add chocolate chips!
Fill 12 muffin tins and top with additional chocolate chips (if you like).
Bake for 20-22 minutes or until toothpick comes out clean!
Let cool for 10 minutes before transferring to a cooling rack!
