I know that peach season was in it’s peak last month, but I wanted to share this delicious salad in the event you can still swipe some juicy peaches from your local grocery.
I feel like I’ve been deprived of flavor the last couple of months at home as Eric and I have been doing an intense fat-loss program, so wrapping that up and diving back into flavorful recipes has been so much fun.
My sister and I were on the phone and she had just made this for herself, so I immediately went out and got the ingredients to do the same. It’s a very simple salad with multiple dressing options, so here we go!
PEACH BURRATA SALAD (for one):
1 cup mixed greens
1/2 sliced peach (or a whole one!)
1/2 burrata ball
6 sliced cherry tomatoes
A handful of walnuts
A handful of sliced red onion
HONEY MUSTARD VINAIGRETTE via The Defined Dish (for one):
2 tbs olive oil
1/2 tbs dijon mustard
1/2 tbs honey
1/2 tbs apple cider vinegar
1/2 tbs lemon juice
salt & pepper to taste
Another popular dressing with this is balsamic vinaigrette or balsamic glaze!
