Yay! My first actual recipe in 2021. I’m excited to finally start cooking again and make healthy meals! When my parents were in town a few weeks ago, they made this super easy seafood salad and I’ve been making it a lot myself lately! The only work is sautéing shrimp but otherwise, it’s a grab ingredients and put-together salad. The dressing is just as easy and you can mix up whatever veggies you like. But I’ll list my favorites below.
Ingredients:
Sautéed shrimp cooked with seafood seasoning
Lump Crab (I buy in the jars at HEB)
Spinach
Diced bell peppers
Sliced tomatoes
Avocado
Red Onion
Goat cheese or soft cheese of choice
Dressing of choice
Here is a simple dressing (serves 2) that I think complements it well!
1 oz Dijon Mustard
1 oz Apple Cider Vinegar
1 oz olive oil
That’s it. It’s easy, light, full of flavor, and will make you feel energized and healthy. Enjoy!
