Snack boards might just be one of my favorite things! Today I put together a toddler/adult friendly snack board for Saint Patrick’s Day. If I’m being honest, my kids aren’t really into the green foods… This was a little trickier to think of but I threw in some kiwis and apples to add some nutritional value.
If you’ve been around here a while, you know that spinach muffins are one of my favorite things to serve my kids. It’s one of the few ways I can get greens in them and they love the taste! Sorry these are a little browned… my hands were pretty tied when the oven timer went off yesterday! But I swear they taste great.
I made some shamrock pretzels to add some flare to this snack board. They were super easy! All I did was purchase some white candy melts and mix in green sprinkles. Pretzel minis make for great shamrocks! After a few minutes of melting a cup of candy melts in the microwave and stirring, I dipped each pretzel piece in the chocolate and laid out on a parchment. They take 30 minutes to dry and fused together pretty well! Not one shamrock broke! (Pssst: make sure to clean up chocolate immediately as it will harden if you leave in sink with water and make it impossible to clean!)
