One of my favorite baked goods to make in the heart of October is healthy pumpkin bread from Cookie and Katie! I love it. My husband loves it. Mt kids love it. And we generally polish it off within two days.
I love the aroma of pumpkin wafting through the house as this bakes. I added chocolate chips to make it more of a dessert.
Here is the recipe!
Ingredients:
1 cup canned pumpkin pureƩ
2 eggs
1/2 cup maple syrup of honey (we used maple syrup!)
1/3 cup olive oil
1/4 cup milk
1 1/2 tsp pumpkin pie spice
1 tsp baking soda
1 tsp vanilla extract
1/2 tsp salt
1 3/4 cups whole wheat flour
1./2 cup chocolate chips (for fun!)
Directions:
Preheat oven to 325 and spray a 9×5 bread pan with PAM
Mix all ingredients in a mixer or small bowl like I did here
Use a whisk to blend thoroughly
Pour batter into pan and bake for 55-60 minutes!
Let cool and serve warm!
