My Aunt gave me The Healthy Mind cookbook earlier this year called and I finally got around to browsing it for some inspiration. What took me so long? Honestly, moving and not putting the book in a more obvious place!
I have been on a roll of creating healthy salads and was stoked about the zesty flavor of this one. I love this particular cookbook because it goes through so many of your favorite power foods and discusses the impact they have on your brain! It made the meal feel like it was helping me in more areas of my life than my happy belly ;)
I wanted to share this Avocado Citrus Salad with you and urge you to create it and add some grilled chicken or shrimp to make it a heartier meal! Here is what you’ll need.
Ingredients:
1 grapefruit
4 cups loosely packed mixed greens (I chose spinach)
1 large avocado
1/4 cup fresh mint leaves
1/2 cup shaved fennel (I used fennel seeds)
1/4 cup extra virgin olive oil
freshly squeezed grapefruit juice (excess from your grapefruit leftover)
1 lemon squeezed or 1 tablespoon lemon juice
1 tablespoon lime juice
1 tsp lemon zest
1 tsp grated ginger
sea salt
pepper
Directions:
Add mixed greens, avocado, and mint to a salad bowl.
Supreme a grapefruit and squeeze excess juice into a bowl. Directions on how to supreme via youtube here.
Add sectioned grapefruit to salad bowl.
In a salad dressing shaker, add lemon, lime, and grapefruit juice, lemon zest, honey, grated ginger, sea salt, pepper, and olive oil. Give it a good shake.
Pour over your salad and toss!
