My friend Beth is the best chef & baker I know. Everything she makes is delicious from salmon, to salads, to homemade pizzas, blueberry muffins, key lime pie, and more. I feel like I’m constantly asking her for recipes! After she recently made this brussels sprout salad from The Defined Dish, I was eager to try making it myself! It’s the perfect flavorful salad with so many goodies, you’ll be eager for a second helping. I highly recommend making this salad ASAP and you can easily throw in grilled chicken to make it it’s own meal. And it’s just as good leftover ;)
SALAD:
1 bag shaved brussels sprouts
1 granny smith apple, diced
Handful
1 cup candied pecans/walnuts/ or 1/2 cup plain pine nuts- whatever nut is your favorite
2 oz goat cheese
not pictured, but highly recommend 1 large avocado as well!
DRESSING:
1/4 cup extra virgin olive oil
2 tbs apple cider vinegar
2 tbs honey
2 tbs fresh lemon juice
1 tsp dijon mustard
1 tsp salt
1/2 tsp pepper
I prefer adding the dressing about an hour before serving to soak up all the flavor! I use this container to shake up dressing & pour!
