Is it me or is it easy to get stuck making the same meals for yourself every week? I’ve been so terrible at meal planning lately so we’ll go to the store without a game plan and buy all the same things. And when I don’t plan, it tends to get boring and often not so healthy around here. Lately I’ve been craving a little variety with my lunch and have had fun mixing up my salads. I thought I’d share some ideas with you in case you need a little variety in your life too!
I don’t really measure these ingredients so I’ll just tell you what they are and you can decide how much of each item makes sense to you. But if you need some pro tips on ways to compose the perfect salad, my sister took over my blog in this post and I always reference when I want to make a dynamite salad for guests!
Spinach Salad with Beets:
Add chicken to make it a full meal
Spinach
Beets: You can buy pre-cooked beets in a can from Trader Joe’s and they are amazing!
Pine Nuts
Red Onion
Goat Cheese
Avocado
For dressing I mix 1 part olive oil, 1 part apple cider vinegar, a splash of lemon juice, and a tbs of maple syrup!
Corn Salad:
Sweet Corn (dynamite if grilled)
Sliced cherry tomatoes
Red onion
Diced cucumber
Goat Cheese or Feta
This salad is great because you can add all sorts of things and it just adds to the flavor. Whether it’s avocado, red peppers, or cherry tomatoes, they all make for an excellent meal. I use olive oil + salt and a splash of lemon for dressing!
Simple Chef Salad:
Sliced deli meat or rotisserie chicken
Spinach
Radishes
Cherry tomatoes
Diced Cucumber
Sliced Avocado
Red Pepper
String Cheese
All I use for dressing is olive oil and Gibson steak seasoning. It’s delicious!
