This recipe from 40 Aprons has been a huge hit with my husband! He had no idea I switched out some ingredients to make it a bit healthier and was impressed by the taste. “Wow, that’s good”… If you know Eric, he’s pretty direct and always gives me his honest feedback!
That being said, this recipe didn’t photograph well. I promise it tastes WAY better than it looks! If you’re doing Faster Way to Fat Loss, highly recommend this recipe for a low-carb day! You’ll love it!
Ingredients:
4 cups chicken breast, cooked & shredded
3 cups frozen cauliflower rice
1 cup green onions
Sauce Ingredients:
1/2 cup Mayo made with Avocado (Primal Kitchen is a great one!)
1/4 cup Vegan Ranch Dressing (If it’s made with avocado oil, you’re good to go! Also love Primal Kitchen for this)
1/4 Coconut Cream (only solid white part from can)
1/2 cup hot sauce
1 tsp garlic powder
1 tsp salt
Directions:
Preheat oven to 350
In a medium bowl, mix chicken, cauliflower rice, and onions (note- I forgot the onions and it was still SO GOOD)
In a separate bowl, mix all the sauce ingredients.
Pour sauce ingredients over the chicken and mix together
Pour into 9×9 casserole dish evenly
Bake for 30 minutes!
