I have discovered the most incredible ingredient EVER and I’m so exited to share it with you today! Are any of you fans of Trader Joe’s? I don’t get all my groceries there but I do get special items like a variety of nut butters, chicken sauages, nuts, and of course, Vegan Pesto. This stuff is the real deal you guys. It’s pesto without dairy and has the healthiest ingredients!
If you caught my stories from the other day, you know I’m starting Faster Way to Fat Loss next week. I’m a pretty healthy eater and routine exerciser but I’m still struggling to lose some of my baby weight (and that’s okay!). I just thought I’d try something different and get a new education on food! So wish me luck and I’ll be sure to share updates on how it goes.
Anyway, I’ve been trying new foods in anticipation of this program and discovering this pesto was like striking gold! I have been using it in a quite a few recipes and it makes my meals even more exciting to look forward to.
So here’s a reallllly simple recipe for you all: a basic salad with this pesto and chicken.
Ingredients:
1 cup spinach
1 cup rotisserie chicken
1/4 cup TJ’s Vegan Kale & Basil Pesto
1/2 large tomato chopped
1/4 cucumber chopped
1/2 small avocado
Directions:
Heat rotisserie chicken mixed with pesto in microwave
Add tomato, spinach, and cucumber to bowl of spinach
Mix in rotisserie chicken! No dressing needed :)
