Sharing weekly recipes via Tuesday Five has really forced me to look at a variety of recipes. I didn’t realize that after I shared a few easy favorites, I would really have to challenge myself to explore new things! I don’t think I’ve repeated a meal yet on Tuesday Five. Anyway, sometimes things get dull around here with cooking the same few things, especially since I like to cook paleo/whole30 meals and don’t want difficult recipes! (Keeping an eye on two under two while cooking isn’t always easy!) SO, I decided I had to go back and look at recipes I’ve made before and see if there are paleo versions of them!
So today it’s Fish Sticks for the WIN! I made them again last night and they were a hit. So healthy too. So here is an easy recipe via Paleo Hacks.
INGREDIENTS (serves 2 adults):
1 lb cod
1/2 cup almond flour
1/4 tsp garlic powder
1/2 tsp onion powder
Salt & pepper for extra taste!
1/4 tsp cayenne pepper (leave out if you don’t want zip but this makes it extra good)
2 eggs
DIRECTIONS:
Pre-heat over to 350 and grease a baking sheet. Use coconut oil if you want to keep it paleo. I prefer olive!
Mix flour and powders in a shallow dish.
In another shallow dish, beat eggs.
Cut cod into bite size pieces!
Dip fish into egg and then roll in flour and transfer to baking sheet
Bake for 10-12 minutes and flip halfway through.
Enjoy with your favorite sides! (we love roasted veggies and sweet potatoes)
