There is something so refreshing about a salmon salad. Like you’re doing right by your body. Don’t you just feel good both physically and mentally after eating a refreshing salad?
Occasionally I’ll make salmon salad for lunch if I think I can squeeze it in while feeding the kids and getting them ready for nap. But more often, this is a great dinner option! I highly recommend getting a small food processor for mixing together this dressing.
Ingredients:
6 oz Salmon (I prefer Atlantic)
Seafood Seasoning (I love the kind H-E-B has!)
Your choice of veggies (I used roasted peppers, cucumber, and tomatoes)
1-2 cups spinach
Dressing: (makes more than enough to store)
1 Avocado
1 lemon juiced
1 tbs dijon mustard
1 tsp apple cider vinegar
1 tsp black pepper
1/4 cup olive oil
1/2 tsp salt
3 cloves garlic, minced
Directions:
Preheat oven to 400
Rub olive oil on salmon and season with seafood rub
Bake for 15 minutes
Using a small food processor, blend sauce ingredients together. Store in salad dressing container!
Add veggie choices to spinach and top with salmon.
Drizzle with sauce & enjoy!
