Last week I asked you guys what you wanted to see more of on the blog and I was pleasantly surprised by the requests for more recipes! I’ll be the first to admit I’m not a huge cook (I get anxiety cooking for friends coming for dinner, ha!), but I do enjoy making healthy meals for my family and have been working hard at adopting the skill.
These beef fajitas are one of my favorite meals to make because they have great flavor but are also paleo/Whole30 friendly! Plus they are husband approved and Eric is a bit of a foodie!
The ingredients that make this recipe so delicious are the spices! In the past, I have been totally turned off by recipes that list a ton of ingredients because it automatically means to me #toomuchwork. But when the majority are spices, it’s really way more simple than it looks! Plus these spices are ones you most likely already have.
I adopted this recipe from A Healthy Life for Me! I took out the broth & jalapeño
Ingredients:
1 1/2 lb flank steak
1 yellow bell pepper
1 red bell pepper
1 orange bell pepper
1 yellow onion
5 oz shitake mushrooms
diced green onion and cilantro for taste
1 minced clove garlic
1/2 tsp chili powder
1/2 tsp salt
1/2 tsp dried oregano
1/4 tsp cayenne pepper
1/8 tsp paprika
1/8 tsp cumin
1/8 tsp ground black pepper
1 lime squeezed
1-2 avocados
Directions:
Cut beef into bite size pieces and put in a bowl. Mix spices and lime in a bowl and mix with steak. I set aside to marinade in the fridge for an hour or two but this isn’t necessary.
In a large skillet, sauteé steak with olive oil (or coconut oil to make Whole 30!) until cooked evenly through. Remove but keep juices in pan.
Add vegetables to pan and cook through.
Throw steak back in and cook for several minutes.
Add green onions and cilantro for taste.
Enjoy with diced avocado and if you need a little more carbs, over tortillas!
