If you’ve been following along in Instagram stories, you’re aware I’ve been preparing a few fun Whole30 meals for dinner and sharing them. I found the most delicious (I’m telling you- so so good!) turkey basil meatloaf on Pinterest through Little Bits of Real Food + Real Talk blog.
Have you ever cooked something healthy for your family only to get the response, “well, it tasted healthy” and nothing further? Yeah, it’s good for you but maybe not quite as tasty as it could have been. Well, you won’t get that response from this recipe. It’s not only great for you, but insanely delicious. Just make sure to follow the recipe exactly! (I say that because I’m one to add a little bit of x here and a little less of y here and it doesn’t turn out the same!)
Ingredients:
1 lb ground turkey
3 tablespoons chopped fresh basil (this is essential)
1 egg
1/4 cup almond flour
1 tsp garlic powder
1 tsp salt
Tomato Dressing:
1/4 cup chopped tomatoes
2 tbs tomato paste
1 tbs chopped basil
1 tsp salt
1 tbs apple cider vinegar
Directions:
Heat oven to 400 degrees
In small bowl, combine ground turkey, egg, basil, flour, garlic powder, and salt. Mix well.
Place meatloaf on a foiled baking sheet (you don’t need a meatloaf pan for this one!) and flatten with your hands until its a nice solid 1 inch thick rectangle.
Mix dressing in small bowl and lather on top!
Bake for 30 minutes.
I serve over cauliflower rice which I cook for 20 mins at 400 with oil, salt, and pepper! YUM!
