It’s been a long time since I have posted a recipe and it’s mostly because I have been so focused on one niche aspect of my blog: fashion. Fashion has been thrilling for me and I love sharing my fun finds while writing tidbits about what’s going on in my life. But another huge part always takes place in the kitchen and although my diet lately has included lots of mac and cheese and chocolate, I’ve been working really hard to get necessary vitamins to keep me strong and healthy.
Over a month ago, Eric discovered the most delicious summer detox salad recipe that we have been making on repeat. I never thought I’d enjoy raw broccoli and strawberries together but it turns out when you have a fabulous dressing, you can do wonders for your taste buds. I will be the first to admit that this recipe is not my own (as much as I would love to claim it) but from Joyful Eats.
This is a great salad to bring over to a dinner party if you’re a guest and need to bring a side. It serves about 6 so Eric and I usually throw it in tupperware for the week and add our dressing each day. It’s delicious and I promise your guests (or hosts!) will absolutely love it.
Ingredients:
1 bunch kale chopped
1 large apple sliced
1/2 cup chopped green onion
2 cups sliced strawberries
1-2 cups blueberries
1-2 cups chopped broccoli florets
Bonus Ingredients for Extra Yum:
1/2 cup salted or toasted almonds
1-2 medium avocados
1/2 cup crumbled goat cheese
Dressing:
1/4 cup lemon juice
1/4 cup orange juice
1/2 cup canola oil
2 tbs dijon mustard
2 tbs honey
1/4 cup fresh basil chopped
salt and pepper to taste
The directions for this are rather simple. Combine the ingredients in a large salad bowl and blend the dressing ingredients in a small cuisinart. Add the bonus ingredients if desired :) Drizzle dressing over salad about 1/2 hour before you are ready to serve.
