Nothing says October like a Pumpkin does. Our Church just loaded their lawn full of them and while we walk our toddlers from the classroom to chapel, they are giddy as they touch and observe (and try to climb) them. Fall momentum is in full force and I can’t help but create pumpkin everything at home. Pumpkin pie bites. Pumpkin muffins. And Pumpkin protein shakes. I keep it going with the scent of my Pumpkin spiced candles. I love pumpkin everything.
Pumpkins make me think of Halloween & Fall festivities: visiting apple orchards & farms, stuffing old jeans with hay and creating scarecrows for our front lawn. They remind me of plaid scarves, tall boots, and strolling around the farmer’s market. They make me nostalgic for Midwestern falls with colors so vibrant and mornings so crisp, I can’t help but want to spend every waking minute outside. Pumpkins symbolize change for me. And happiness. So I wanted to create a special post dedicated to pumpkins for the sake of the season.
I found a few facts about pumpkins that I thought were kind of interesting including the word ‘Pumpkin’ first appeared in the fairytale Cinderella. And that over 1.5 billion pounds of pumpkin are produced each year. Pumpkins are extremely healthy for you too! Such a bonus since they taste so delicious :)
Since I cook and bake mostly paleo recipes at home, I decided to try this delicious Pumpkin Muffin recipe from Gluten Free Homemaker. I added a teaspoon of cinnamon to the recipe and it tasted PERFECT.
In addition to baked goods, I have been on a soup binge. It’s just part of the season :) I have been making my usual butternut squash and chicken soup recipes, but I think I’m going to give this Pumpkin Apple Soup a go. What do you think? Sounds so tasty, right?
