Overnight Oat Summer Goodness :)

I love exchanging recipes with my coworkers :) It’s so fun coming to school and getting new ideas for delicious meals. I’ve been making these Vegan Overnight Oats from Oh She Glows and it’s the perfect morning fuel. It’s simple and filling and can be ready in just two hours.

Ingredients:

1 ripe banana
1/2 cup oats ( I use gluten free)
1/3 cup chia seeds
1 tsp flaxseed
1/3 cup chopped walnuts
1/3 cup blueberries
1/2 cup coconut milk
1 tsp honey
1 tsp cinnamon

Directions:

Using a fork, mash banana in a bowl & add oats and chia seeds
Pour in coconut milk and mix with honey and cinnamon
Add flaxseed, walnuts, and blueberries for delicious toppings!
Store in a covered container in fridge until ready to eat.
Voila! Breakfast!

How’s that for short & sweet?
