Grr. I’m kicking myself because I was supposed to be up a few hours ago working out at MOD. But I couldn’t bring myself to get out of bed, not with the soft blankets and comforters keeping me so cozy and warm. Luckily, I’ll be out on the playground with our tots later today and I plan to take the dogs to Zilker Park after work. I’ve got my fitbit on and I’m ready to track my steps. I also plan on making a healthy meal for dinner like this walnut crusted salmon recipe I made last night.
I’m sorry this piece of salmon isn’t more photogenic. It broke while I was taking it off the baking pan and I couldn’t bring myself to start over just for a picture. Y’all- food photography is no joke. Food does not always look that pretty. But I will tell you that this salmon was insanely delicious and there is nothing quite like the taste of a toasted walnut. The following ingredients might throw you off, but I promise I’ve used them, tried them quite a few times, and I have never been disappointed ;) This is such a simple healthy meal that keeps you full for hours. I hope you love it!
Ingredients:
2 6oz salmon fillets
1/4 cup chopped walnuts
1 tbs apple cider vinegar
1 tbs olive oil
2 tbs Dijon Mustard
Directions:
-Heat oven to 400 degrees
-in a small bowl, mix olive oil, apple cider vinegar, and Dijon mustard
-chop walnuts and add to mixture and stir
-in a baking pan, lay salmon fillets
-coat fillets with layer of mixture… layer should be thick
-bake for 20-22 minutes or until cooked thoroughly
