Rotisserie Chicken & Pear Salad

We were at a friend’s house recently and they served their kids rotisserie chicken. She bought it, pulled it apart, and threw it into tupperware for later use. Why had I forgotten about rotisserie chicken? Eric and I buy Costco brand to freeze, thaw, then cook. Honestly, it never really tastes that good. The chicken breasts are HUGE (maybe not the safest chicken to be eating) and they always turn out kind of bland unless we throw them in the crockpot. So this friendly reminder from our pals about the best tasting chicken that comes already cooked was very welcome! I bought a rotisserie chicken the next day and decided I was going to make a fun salad for the week. And let me tell you that it is so good, you won’t even need dressing!

Ingredients:

1 cup Arugula

1 rotisserie chicken (pull apart one breast, refrigerate rest)

3 tbs chopped red onion

15-20 almonds

1/2 pear chopped (I sometimes do a whole pear)

Generous serving of crumbled goat cheese (yum!)

Directions:

Place all ingredients in a single serving salad bowl and mix it up! Voila! 

Ps: If you insist on using dressing, I suggest a lemon vinaigrette or something with a little zest!
