Happy Monday You Guys! Today I’m sharing a super healthy and tasty breakfast. Simple as can be. If any of you enjoy eggs as much as I do, I think you’ll love this one. My sister Brit is the Queen of Scramblers and this post is dedicated to her.
I’ll admit that I usually force feed myself vegetables. I have them every day, but I have to usually cook them to make them taste good. Having veggies in my breakfast is a great way to get them in my meal and out of the way. And it’s an extremely healthy kick start your day.
For this veggies scrambler, I used the following ingredients:
1/4 red bell pepper
1/4 yellow bell pepper
1/2 cup broccoli
2 eggs
1/2 small avocado
1 tsp olive oil
Directions:
Drizzle oil in pan and add vegetables. Saute for 2-3 minutes and add eggs. Flip or mix scrambler and throw it on your plate. Add avocado. Voila!
I should add that this is the easiest recipe to mix and match. Don’t like broccoli? Add kale. Or spinach. Love onion? Throw it in there! If you’re like my husband, you’ll want your hot sauce to spice it up. If you’re watching your cholesterol, try using three egg whites.
I will sometimes cut up the veggies the night before if I feel I’m going to be low on time the next morning. Makes it super easy & quick.
