Hello Sunday! I slept in until 9 this morning which was amazinggggg. I’m an early riser so sleeping in is rare for me. The dogs usually wake me up to get outside but today, they were little darlings! We got up, made a delicious taco breakfast, listened to Charlie Brown Christmas, and got organized for the day. It’s super chilly out there so I thought I’d share my favorite chicken soup recipe!
You know by now that I’m not a huge fan of cooking with grains… I don’t buy pasta or bread or many processed carbs for that matter. Let’s be real…I’m good when I’m at home. If I don’t have it, I won’t eat it. Period… When laziness rocks… ;) If I’m out and about or at work, that’s another story. But at home, I love cooking recipes that include lots of natural ingredients! One of my favorites this season is chicken soup. Chicken soup can often be high in sodium and have lots of other preservatives pumped into them when they are store bought, so I love making them at home. I also find it kind of relaxing after a day of work to hang in the kitchen, listen to music, and get something delicious on the stove.
This roasted vegetable chicken soup will leave you filled and super happy. It tastes delicious and is extremely nutritious… And the best part about is that you can mix it up based on the vegetables you like! Here is how I make it:
-2-3 cups shredded chicken
-1 head broccoli
-1 large zucchini
-2 yellow onions
-1 cup diced carrots
-1 tbs garlic
-32 oz chicken broth
-Salt and pepper to taste
-Chop onions and sauté in a large sauce pan with olive oil
-Chop broccoli and zucchini and add to the mix
-After onions and vegetables are slightly browned, add chicken broth
-Bring to a boil
-Chop up carrots and shred chicken (I generally use a rotisserie chicken)
-Using a Cuisinart hand blender, puree soup for a thicker broth… (if you don’t have a hand blender, no problem! just chop vegetables into smaller pieces and let them remain unblended in broth)
– Add carrots and chicken and cook for 30 minutes on low heat or until carrots have cooked through
– Add salt & pepper to taste!
